Coolea cheese, shredded ¼ tsp. freshly grated nutmeg 4 large eggs, separated sea salt freshly ground black pepper Preheat oven to 400°. Heat milk to warm in micro or stove top. Butter inside of 4(8 oz.) ramekins and set on tray. Place butter in a heavy saucepan over low heat until melted, stir in flour to form a roux.
