Ingredients: 1 cup carrots, chopped ½ cup celery, chopped 1 ¼ cup yellow onion, chopped 4 garlic cloves, minced 3 ½ cups potatoes, peeled and cubed 4 cups broccoli florets, chopped 1 ½ tsp dried thyme 1 ½ tsp ground white or black pepper 2 ½ tsp salt 4 ½ cups chicken broth 1 ½ cups heavy cream ¼ cup all-purpose flour 8 oz Colby cheddar cheese, shredded Instructions: Add all vegetables, seasoning, and broth to a slow cooker.
