Weeknight dinners can be tough.. The last thing you want to do after working all day is spend hours in the kitchen with a mess of dishes to clean after (unless that’s your thing!) So, let’s make a weeknight night dinner, or two, simple with this easy, delicious, healthy chicken (or tofu, if THAT’S your thing) dinner by @fayette_nyehn! 😋 (Bonus: it only uses one pan.)  Ingredients: - 2 cups diced chicken breast or tofu - 3 cups diced carrots - 1 1/2 cups diced red pepper - 2 cups diced zucchini - 2 cups broccoli - 1/4 cup olive oil - 1/4 cup red wine vinegar - 2 tbsp Dijon mustard - 1 1/2 tsp oregano - 1 1/2 tsp garlic powder - 1 1/2 tsp black pepper - 1 tbsp honey (optional) - Salt to taste  The best part? This recipe makes enough for Monday, Tuesday, AND Wednesday night. Thank us later ?
