Espresso Truffles! 1 scoop of NEW Vanilla Latte Perfect Fit Protein; 2 tsp cacao powder; 1 tsp cinnamon; 6 medjool dates, pitted; 1/3 cup unsalted cashews, ground; 2 shots espresso. Place raw cashews in food processor, grind into flour. Pour into a bowl. Place dates in food processor, grind until a paste-like consistency. Add remaining ingredients, stir until fully incorporated. Roll dough into 1-inch balls, place in container. Refrigerate for 30 minutes. Makes 12, serving size 2.
