Loaded Potato and Meatloaf Casserole 🥔🍖
Ingredients: 1½ lbs ground beef or turkey, ½ cup chopped onion, 1 tbsp minced garlic, 1 cup seasoned bread crumbs, 1 tbsp Worcestershire sauce, 1 egg (beaten), ⅓ cup cottage cheese, ½ cup BBQ sauce, 2 lbs potatoes (peeled, diced), ½ cup butter, ½ cup sour cream, ½ cup warm milk, 1 tsp kosher salt, 1 tsp black pepper, 6 slices bacon (crumbled), 1½ cups shredded cheddar cheese. Instructions: Preheat oven to 375°F. Combine meatloaf ingredients and press into a 9x13" pan. Bake for 30 mins. Cook and mash potatoes with butter, sour cream, milk, salt, and pepper. Spread potatoes over meatloaf, top with cheese and bacon. Bake for 15 mins until cheese melts. Prep Time: 30 mins | Cook Time: 45 mins | Total Time: 1 hr 15 mins | Kcal: 707 | Servings: 8
