You know that summer is really here when you can visit your local farmer's market and is it bursting with fresh fruits and vegetables. Shopping at Eastern Market in Detroit is in my top 5 list of favorite things to do each summer (and fall) and I look forward to it all year-round. I am totally a morning person and getting up early on a weekend day, gathering my family and buying fresh produce is the absolute best. Just writing about it makes me super happy! I have been wanting to make fresh rainbow veggie spring rolls for awhile and finally got around to it. What was I waiting for? They are absolutely delicious and the perfect summer dish. They can be eaten as an appetizer, a side dish or just add cooked chicken or tofu to make it a more filling dish. I paired these with the best peanut dipping sauce that will have you going back for more and more! Too good. What is really impressive about these rainbow spring rolls is that they are loaded with all different colors. I love anything that is rainbow and my kids are loving these too. Can't go wrong with teaching kids to eat the rainbow! I bought most of the ingredients for these spring rolls at Eastern Market. Yield: 10 spring rolls Author: Amanda HernandezPrint Recipe Rainbow Veggie Spring Rolls with Peanut Dipping Sauce Rainbow Veggie Spring Rolls with Peanut Dipping Sauce are loaded with red pepper, carrots, yellow peppers, cucumber, green onion and red cabbage and dipped in an easy peanut sauce for the perfect appetizer. prep time: 20 MINScook time: 0 MINStotal time: 20 mins INGREDIENTS 10 spring roll wrappers 1 red pepper, julienned 1 large carrot, julienned 1 yellow bell pepper, julienned 1/2 cucumber, julienned 2 green onions, thinly sliced 1 cup red cabbage, finely chopped Peanut Sauce 1/4 cup drippy peanut butter or 1/2 cup peanut butter powder 1/4 cup sesame oil Juice from 1 lime 1-2 tablespoons rice vinegar 1 teaspoon garlic powder Optional: 3/4 teaspoon red pepper flakes INSTRUCTIONS Dip a spring roll wrapper in warm water on a plate for about 10 seconds and lay on a dry plate or cutting board. Arrange veggies in the center of paper. Fold the bottom of rice paper over the fillings and fold in the sides and roll until it is all rolled up. Continue until all ingredients are used up. Cut spring rolls in half and place cut side up. Whisk together all ingredients for peanut sauce. Enjoy! If you live within a couple hours of Detroit and have not been to Eastern Market, I highly, highly recommend it. It is huge and there are so many things to buy and so many people there. It is amazing! I also love shopping the different shops outside of Eastern Market- there is an awesome wine shop with great wine deals, a store that sells wonderful pickles and apple fritters (not together!) and a yummy Thai food restaurant all within a few blocks. You can find any seasonal produce that you could possibly want and my kids love going as well. I remember the first time that I took my daughter when she was about 9 months old and she loved snacking on all of the fruit so much! Eastern Market means the world to me and you can find me there about 2-3 times a month from late spring through late fall each year. To find a farmer's market in your area, check out the Michigan Farmer's Market Association website. Also, I highly recommend subscribing to their emails for some amazing recipe ideas. I have been subscribed for about a year and love getting more ideas for how to use seasonal produce. It is important to keep our food safe including fresh produce. When purchasing fresh produce at a farmer's market, keep it separate from meat or other raw foods you are buying. Store fresh produce in a fridge at 40 degrees or below. Wash fresh produce with fresh water before cutting into it. If you have any doubt about the produce being fresh, throw it out. Better to be safe than sorry! My big tip when going to Eastern Market: scope out all of the booths to see what you want and then get heavy items on the way back. My mom is the queen of getting a bunch of heavy items such as a ton of cucumbers, pumpkins, etc. and then having to carry them all around haha! I like to bring a little shopping list with me to make sure that I get everything that I need and then we take it all home and refrigerate it as soon as possible.
