2 Servings
Ingredients:
1 large mango
1/2 cup glutinous rice flour
2 tbsp sugar
1/2 cup water

Directions:
1. In a microwave safe bowl, add glutinous rice flour, sugar, and water. Mix until smooth and well combined.
2. Cover the bowl with plastic wrap and microwave for 1 minute. Uncover and stir with a spatula for a few seconds. Cover with plastic wrap again and microwave for another minute. The mochi should be thick and sticky. If there is liquid, microwave for an additional minute.
