Chicken Chow Mein (serves 2) 2 nests of egg noodles 1 chicken thigh sliced ½ onion sliced 1 clove garlic chopped 1 tbsp. light soy sauce 1 tbsp. dark soy sauce handful beansprouts 1 Tsp. sugar 1 tsp. sesame oil 3 spring onions Method: 1: Boil the egg nests for four minutes then drain and plunge into cold water. Once cool. Pop back into a bowl at a tiny bit of oil then mix so the noodles are coated. This will stop them sticking together in the wok. 2: Heat a large frying pan or wok, then add a splash of oil. Pop in the chicken and cooking until golden, this will take around three minutes. Add in the onion and garlic and toss for a minute, then the noodles, dark and light soy, then add in the bean sprouts and mix well. Finally, add a small amount of sugar to taste, some sesame oil and lastly some spring onions. Fry it in the pan until it's nice and crispy. Then in a bowl, add some honey, crushed garlic, crushed ginger, sesame oil, soy sauce, dollop of ketchup, a little sprinkle of sesame seeds. Give it a good mix together. Fry in some mixed peppers, spring onions, then add half of the sauce into the mix, then fry in a bag of ready made noodles, stir fry it for a couple of minutes, then add the final bit of dressing on top of the noodles. Add 1 tsp salt 1 tsp black pepper 1 tsp paprika 1 tsp garlic granules 1 tsp onion granules 1 tsp dried parsley 2 tbsp olive oil 2 tbsp lemon juice 1 tbsp yogurt Mix everything.I am using 2 small chickens here. Make deep cuts in chicken pieces. Coat with the marinade. Leave it overnight in the fridge or atleast marinate for an hour. I covered my air fryer tray with baking paper.
