Chickpea salad 🥑🥒
This salad makes for a great side dish but I also love enjoying it as a snack with some corn chips 🤤 Ingredients: 1 Lebanese cucumber, diced 1 can (375g) chickpeas, rinsed and drained 1 punnet of cherry tomatoes, diced 1/2 a red onion, diced 1 avocado, diced Coriander, finely chopped Dressing A drizzle of olive oil Salt Juice of half a lemon Add everything to a salad bowl. Mix serve and enjoy!

APPLE CAKE BAKED OATS 🍰 RECIPE 🥳👇🏼 By Dietitianrose Ingredients: 
1 large apple (sweet) or 2 small
2 cup (200g) rolled oats
1/4 cup OR ~35g vanilla plant protein powder
OR 1/4 cup (30g) wholemeal plain flour/ flour of choice* + 1/2 tsp vanilla essence 
1 tsp cinnamon
1/4 tsp nutmeg (optional)
1/2 tsp baking powder 1-2 tbsp honey/maple/alt (optional, depending on preference)
2 cups (~450-500mL) milk of choice
1/3 cup (30g) sliced almonds 

*an alternative to protein powder, although I must admit, I personally preferred this recip, taste wise, with the addition of the vanilla protein powder. Please refer to note at the end for alt ways to increase protein intake instead.

3 large bananas, mashed ▫️ 60g coconut oil, melted ▫️ 60g maple syrup ▫️ 2 flax eggs* ▫️ 200g plain flour ▫️ 1 tsp baking soda ▫️ 1/4 tsp salt ▫️ 1 tsp cinnamon ▫️ 30g cocoa powder ▫️ 50ml milk to mix the cocoa powder in ▫️ 5g instant coffee ▫️ Vegan dark chocolate chunks, to top Bake for 40-45 mins (for a less gooey loaf, bake for 45-50 mins) at fan 175 C.
