What a great idea these bacon bowls are! I'd add scrambled eggs (after bowls are baked) into them and top w/ melted cheese for yummy breakfast or brunch idea!

1 baked potato 1 Tbsp butter 2 eggs 2 strips bacon, cooked. 2 Tbsp. shredded cheddar 1 Tbsp. fresh parsley, chopped. salt and freshly ground black pepper.
