JAMAICAN CURRY: marinade goat/lamb in jerk paste & jerk seasoning powder. brown meat & remove. deglaze the pan along with a chopped onion. add curry powder and cook out. return meat to pan with a diced sweet pepper, some diced pickled jalapenos & dried thyme. add some water and a can of coconut milk. add chopped potato and cook till done.
Callaloo greens side Remove callaloo small branches & submerge in cold water. Let soak for a min & remove, discarding water. Repeat twice. Finely chop leaves & branches & set aside. Heat oil & butter in a med skillet over med heat until butter is melted. Add onion & scallions, stirring until soften, about 2 min. Add callaloo, thyme, salt, pepper. Mix all together, add water, cover. Cook over med heat until stems are tender, about 8 min >Good: unsalted butter & no salt Better: add pancetta
