Carley’s Kitchen on Instagram: "SOURDOUGH SANDWICH BREAD INGREDIENTS * 300 g active starter * 650 g warm filtered water * 50 g honey * 40 g oil (avocado or olive) * 20 g salt * 1000 g bread flour INSTRUCTIONS 1. The night or morning before, make sure you’ve fed your sourdough starter. 2. Once your starter is active, add your starter and water to a bowl and mix until combined. 3. Add flour, salt, honey, and oil and mix until dough is shaggy. Cover the dough for about an hour. 4. Next you’ll do 4 series of stretches and folds every 30 minutes. Cover in between. 5. After finals stretch and folds, cover your dough and let it sit for 6-12 hours at room temperature until almost doubles. If you aren’t ready to bake your dough after the 6-12 hours, you can put it in the fridge overnight. 6

Then knead the dough for 5 mins until a smooth dough form. Rest for 20 minutes. Divide the dough into 8 pieces for big tortillas and 12-16 for small tortillas. Roll each piece out on a lightly floured surface as thin as you can without tearing the dough. Cook on a hot skillet for 1 minutes per side. Flip as soon as bubbles appear and the edges look dry. Makes 2 loaves

Ingredients:
* 2 1/2 c water
* 1 c active starter
* 3 t salt
* 1/2 c melted coconut oil (butter or avo oil work too) 
* 4 T honey (or maple syrup) 
* 1 1/2 c wheat bread flour *
*  6 c white ap flour

Directions:
* Mix all ingredients together and kneed in mixer for 10 min. 
* Ferment for 12-24 hours on counter.
* Shape into individual loaves, place in loaf pans or a Pullman pan and proof until risen on counter. 
* Bake at 375° for 30 min

note: you can use all ap white if you don’t have wheat.

A good starter and proper fermentation time is essential to making this pizza great- here’s how you do it: • INGREDIENTS 310g warm water (62% hydration) 100g active starter 500g bread flour (~12% protein) 12g salt • INSTRUCTIONS -Measure out water, starter, flour, and salt into one bowl and mix together until somewhat together -Cover with wet towel and let sit for 30 minutes. Uncover and do a few stretch and folds. Repeat this process about 2-3 times (3-4 times total). -Put into large greased container and let sit overnight at room temperature, until at least doubled. -Remove and portion into 285g dough balls and place into 16oz
