coconut and prawn soup  2 c coconut milk  1 tbsp Thai red curry paste  2 tsp fish sauce  15g ginger,grated  2 scallions, chopped  12 oyster mushrooms  12 shrimp, peeled with tails intact  micro herbs & lime wedges, to serve    Mix coconut milk, curry paste, fish sauce & ginger in a large jug. Divide the green onion, mushrooms & prawns between  ramekins & top with the coconut milk mixture. Steam the ramekins for 10–12 min. Top with the micro herbs and serve with lime wedges.
