2 tablespoon olive oil
    1 large yellow onion, diced (~1 1/2 cups)
      3 cloves garlic, minced
        1 cup diced carrots
          1 cup celery, thinly sliced (2-3 stalks)
            1 red bell pepper, diced
              8 cups vegetable broth
                2 15. oz cans diced fire roasted tomatoes
                  2-3 tablespoon freshly squeezed lemon juice
                    2 cups (dry) red lentils
                      2 tablespoon Harissa spice blend
                        2 teaspoon cumin
                          1 ½ teaspoon coriander
                            1 1/2 teaspoon kosher salt
                              Optional: ¼ teaspoon cayenne
