► Spanish Chicken & Rice (Arroz con Pollo): chicken thighs, pepper, garlic powder, olive oil, onion, bacon, garlic, paprika, saffron threads, tomatoes, fire roasted peppers (piquillo), chicken broth, white wine, rice, frozen peas & flat leaf parsley. Pat chicken dry, season, brown over medium high heat. Reserve. Add onion & bacon, then garlic, seasonings. Soften tomatoes & peppers. Add stock & broth. Simmer rice 5 mins. Add chicken, cover, bake in preheated 400°F oven 40 mins. Broil 10 mins.
