If I could eat one thing for the rest of my life it would have to be Pho. This Vietnamese beef bone soup noodle dish is deep in flavour and aromatic in herbs. My favourite is the "dac biet" which means "special" - it consists of beef, beef tendon, tripe, brisket, beef balls, rib eye and garnished with cilantro and scallions. It's a perfect remedy for any cold winter day!

My first cooking memory was my helping my grandmother knead dough to make dumplings. It was messy, fun and it taught me how to be patient. At the end she would cut a piece off, dye it with some food colouring and let me run off with it; to this day I still prefer the homemade play-dough opposed to the store bought kind!

Like any other Canadian, my favourite Olympic sport is Ice Hockey! I can watch and rewatch the 2010 gold medal game over and over and over again and it will give me chills every time.

My favourite AsianNew Year dish is the Chinese "prosperity" cake. Almost like a steamed cupcake (發糕). Called "faht gau" because the word prosperity in Chinese sounds similar to the word "bloom" (what the cake looks like after it's been cooked). I look forward to these every year!

His humanitarian endeavours are equally as inspiring and inspirational. I would love to say the encyclopaedic knowledge of my parents combined is my favourite Asian cookbook, but a close second place would be "The Wisdom of the Chinese Kitchen: Wisdom of the Chinese Kitchen" by Grace Young for the recipes and stories that I can relate to.

FA GAO Chinese New Year "Prosperity" Cake - tried this one and change the baking powder from 1 Tablespoon to 1 teaspoon.  Used coconut milk and brown sugar.  Next time I might try granulated sugar and almond extract with evaporated milk or water. Also want to try granulated sugar, coconut extract and coconut milk. Texture is good. Wonder what would happen if I used glutinous rice flour instead.
