Chocolate chia pudding - just add chocolate soy milk and stir until thick. For mint chocolate pudding - add a drop or two of peppermint. Hmmm, I wonder if you could freeze it for something like frozen custard....

Buckwheat and almond flour pancakes - add pumpkin or applesauce or vanilla/cinnamon (for pancakes that taste like French Toast). Thick, fluffy and so good!
Almond flour pumpkin muffins - soooo good! Make it with applesauce instead of pumpkin, that's great, too!
